Watermelon Drizzle Bites with Smoked Salmon
1 pack Latitude 45 Cold Smoked Salmon 10 oz
2/3 cup balsamic vinegar
1 tbsp sugar
1 (7-to 8-pound) watermelon
2 tbsp fresh lime juice
2 tbsp olive oil
1/4 cup fresh mint leaves, chopped
2/3 cup crumbled feta cheese
8 oz fresh blueberries
Salt and pepper, to taste
- In a small saucepan set over medium-high heat, combine the balsamic vinegar and sugar. Bring the mixture to a boil and continue cooking it, scraping down the sides as needed, until it has reduced and is the consistency of syrup. This takes about 5 minutes. Set it aside to cool while you prepare the salad.
- Cut the watermelon into stars using a cookie cutter. Lay out on a plate and top with the blueberries, feta cheese and mint. Drizzle the lime juice mixture and the balsamic mixture over top.
- Place the Latitude 45 Cold Smoked Salmon slices beside it and enjoy!
