Smoked Salmon Walnut Salad
1 pack Latitude 45 Cold Smoked Salmon 6 oz
1 bag arugula
1 cup pomegranate seeds
1 cup walnuts
Sea Salt, to taste
Pepper, to taste
Extra Virgin Olive Oil, to taste
- Toast the walnuts in the microwave for a couple minutes, checking periodically.
- Place the arugula on a plate.
- Slice the cucumber in rounds and place on top.
- Roll up 3-6 smoked salmon slices and place on the plate.
- Sprinkle the pomegranate seeds, toasted walnuts, sea salt and pepper. Drizzle with olive oil and enjoy!
