Smoked Salmon Waffles
1 pack Latitude 45 Cold Smoked Loin
10 oz baby spinach
1/4 cup creme fraiche or sour cream
1/2 cup unbleached all-purpose flour
1 tsp baking powder
2 large eggs, lightly beaten
- Preheat a waffle iron to medium heat. In a large bowl, whisk together flour and baking powder. Stir in the eggs to a smooth consistency.
- Spray the waffle iron with cooking spray. Spoon about a 1/2 cup of batter into center; spread evenly on iron and close.
- Cook until golden brown and crisp, this should take about 8 minutes. Repeat with remaining batter. Top each waffle with spinach, creme fraiche, and Latitude 45 Cold Smoked Loin. Enjoy!
