Smoked Salmon Mediterranean Salad
Latitude 45 Smoked Salmon Flakes
1 red onion
½ cup feta cheese
2 tbsp olive oil
2 tbsp red wine vinegar
salt, to taste
black pepper, to taste
1 tbsp lemon juice
1 cup Kalamata olives
1 pack arugula
Pita bread, as desired
- In a large bowl, combine the arugula, cucumber, red onion, tomatoes, olives and set aside.
- In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, salt and pepper.
- Pour the vinaigrette over the salad and toss.
- Add feta cheese and toss lightly until combined.
- Top salad with smoked salmon flakes and pita slices. Enjoy!
