Ingredients
6-8oz Latitude 45 Cold Smoked Salmon Loin
2 large flour tortillas
2 cups spinach
1/2 bell pepper
½ cucumber, ribbon sliced
15oz can chickpeas
1 tsp lemon juice
1/8 tsp salt
Instructions
- Drain the chickpeas and add the lemon juice and salt.
- To build the wraps; place the tortillas on a work surface and add half of the spinach, cucumber, bell pepper, chickpeas, and Latitude 45 Cold Smoked Salmon Loin to each one. Fold the sides in toward the center, then roll from the bottom up, like a burrito. Serve immediately or refrigerate until ready to eat and enjoy!
