Fennel and Smoked Salmon Salad
1 pack Latitude 45 Cold Smoked Salmon Loin
1 fennel bulb (about 8 oz), thinly sliced
1/2 tsp finely grated lemon zest, plus 4 tsp lemon juice
Coarse salt and ground pepper
1 tbsp extra-virgin olive oil
Fennel fronds, to garnish
1 tsp red currants, to garnish
1. In a medium bowl, toss fennel with lemon zest and juice; season with salt and pepper. Lay the smoked salmon slices around a serving plate, top with fennel mixture in the center, and drizzle with oil.
2. Garnish with the fennel fronds and red currants. Serve and enjoy!
