1 small clove garlic, finely chopped or minced
1 onion, finely sliced

¼ cup of trim milk

Instructions
Smoked Salmon Avocado Toast
- Mash avocado, salt, pepper, and lemon juice in a bowl and set aside.
- Toast bread via preferred method until lightly brown and crispy.
- When the toast is ready, spread avocado mixture on the top of each slice.
- Top with Latitude 45 Smoked Salmon, feta, cherry tomatoes & parsley.
- Serve immediately and enjoy!
Smoked Salmon Scrambled Eggs Platter
- Heat a pan over medium-low heat and add oil.
- Add onion and garlic, cooking until slightly translucent, stirring for about 1 minute.
- Add spinach and cook, stirring for about 2 minutes, until wilted and tender. Remove spinach from pan and set aside; keep warm.
- Combine eggs and milk in a bowl, mix together well.
- Add more oil to the pan and add egg mixture. Cook, stirring gently until eggs are just set.
- Add parmesan and mix gently. Season with pepper.
- Toast bread as desired.
- Serve eggs with Latitude45 Smoked Salmon, spinach, tomatoes, avocado & toast. Garnish with chopped parsley.
