Smoked Salmon Sliders with Tarragon Yogurt Sauce
1/4 lb Latitude 45 Smoke Roasted Salmon Flakes
4 brioche slider buns
1 cup plain Greek yogurt
1 tbsp lemon zest
1 tbsp fresh lemon juice
2 tbsp chopped fresh tarragon
Coarse salt and ground pepper
8 beetroot slices
1/4 medium red onion, thinly sliced
1/4 cup fresh baby spinach
- Prepare the sauce: Stir together yogurt, chopped tarragon, and lemon zest and juice; season with salt and pepper.
- To assemble the sliders, scoop a dollop of the yogurt sauce on the bun. Add a bit of baby spinach. Place 3-4 smoke roasted salmon flakes, add 2 beetroot slices and 2 slices of red onion. Put more yogurt sauce on the lid of the bun and place on top for your finished Smoked Salmon Sliders!
