Smoked Salmon Beet & Mandarin Tacos
Latitude 45 Smoke Roasted Traditional 4oz
12 small tortillas
1 avocado, sliced
1 green onion, thinly sliced
1/2 cup sour cream
5 tbsp chopped cilantro
2 cups red beet cubes
2 cups mandarin, peeled and separated
⅓ cup chopped red onion
2 tsp red wine vinegar
1 tsp honey
1 pinch sea salt
- For the beet and mandarin salsa: add the beet cubes, mandarin slices, 3 tbsp of the cilantro, red onion, red wine vinegar, honey and 1 pinch of sea salt to a bowl and mix.
- Place the Latitude 45 Smoke Roasted Traditional loin on a plate and break apart into flakes with a fork.
- Lay out all the tortillas on a plate or taco holder. In each tortilla place 1-2 slices of avocado, a layer of the flaked smoked salmon, some sour cream and top with the beet and mandarin salsa.
- Garnish each taco with green onion and the remaining cilantro.
- Drizzle lime over top and enjoy!
