Ingredients
Candied Salmon
6 4oz Latitude 45 Traditional Smoke Roasted Salmon
1 cup brown sugar
1 cup maple syrup
¼ cup water
Pumpkin Old Fashioned Cocktail
2.0oz bourbon whiskey
.25oz simple syrup
2 bar spoons of melted pumpkin butter
3 dashes of angostura bitters
3 dashes of orange bitters
Instructions
Candied Salmon
- In a large bowl, combine brown sugar, maple syrup, and water over medium-high heat.
- Stir until the sugar dissolves, then brush down the sides of the pan with a wet pastry brush.
- Once boiling, insert a candy thermometer. Allow mixture to boil, without stirring, until candy reaches 300 º F (149º C).
- Remove saucepan from heat. Allow it to sit until it stops bubbling completely. Stir in the extract of your choice.
- Grab Latitude 45 Traditional Smoke Roasted Salmon using tongs and quickly dip each piece into the mixture.
- Place each piece on parchment paper to dry. Allow to cool completely and enjoy. Happy snacking!
Pumpkin Old Fashioned Cocktail
- Combine all ingredients in a mixing glass
- Fill 3/4 full of cubed ice
- Stir contents for 10-15 seconds until chilled
- Strain into a rocks glass
- Use large 2”x2” ice cube
- Decorate with an orange ribbon on top
