Mediterranean Zucchini Noodles With Smoke Roasted Salmon
4 oz Latitude 45 Smoke Roasted Atlantic Salmon
2 zucchini, spiralized
1 cup red cherry tomatoes, sliced in half
1 avocado, diced
3 garlic cloves, minced
½ cup feta cheese
¼ cup lemon juice
2 oz olive oil
Salt and pepper to taste
Basil leaves (for garnish)
- In a large pan, saute zucchini in garlic and olive oil.
- Break apart pieces of salmon and mix into the zucchini while sauteing.
- Place sauteed zucchini and salmon into a bowl. Toss in avocado, cherry tomatoes, feta cheese and lemon juice. Add salt and pepper to taste.
- Garnish with basil. Enjoy!
