Beetroot Marinated Smoked Salmon Sandwich
6 oz Latitude 45 Cold Smoked Salmon Loin
2 cups beetroot (grated)
¼ yellow squash (sliced thin)
¼ cucumber (sliced thin)
1 tsp extra virgin olive oil
1 tsp fresh basil
2-3 slices rye bread
1 tsp pepper
- Spread grated beet on top of salmon loin. Wrap in plastic wrap & refrigerate until cured.
- Sautee squash & cucumber lightly in olive oil until cooked. Set aside.
- Place beetroot marinated salmon loin, squash, cucumber & fresh basil onto rye bread. Sprinkle with pepper & enjoy at your lunch break!
