Ingredients

  • 6 oz Latitude 45 Cold Smoked Salmon Loin 

  • 2 cups beetroot (grated) 

  • ¼ yellow squash (sliced thin) 

  • ¼ cucumber (sliced thin) 

  • 1 tsp extra virgin olive oil 

  • 1 tsp fresh basil 

  • 2-3 slices rye bread 

  • 1 tsp pepper

Instructions

  1. Spread grated beet on top of salmon loin. Wrap in plastic wrap & refrigerate until cured.

  2. Sautee squash & cucumber lightly in olive oil until cooked. Set aside.

  3. Place beetroot marinated salmon loin, squash, cucumber & fresh basil onto rye bread. Sprinkle with pepper & enjoy at your lunch break!
