Smoke Roasted Salmon Stuffed Peppers with Honey and Apples

Ingredients

  • 6 oz Latitude 45 Smoke Roasted Atlantic Salmon

  • 5-6 bell peppers, inside seeds and membranes removed

  • 1 small onion (or half 1 large onion), diced

  • 1 apple

  • 1 tablespoon honey or honeycomb

  • 1/2 cup uncooked rice

  • 1/4 cup pine nuts

  • 3/4 tsp paprika

  • 1 Tbsp fresh parsley (or 1/2 tsp dried parsley)

  • 1/4 tsp salt

  • 1/8 tsp pepper

    Sauce

  • 15 oz tomato sauce

  • 1/2 cup water

  • 3 garlic cloves, minced

  • 1 Tbsp honey

  • 1/4 tsp salt

Instructions

  1. Cook rice on rice cooker. Add in onions, apple, pine nuts, salt, pepper, parsley, and paprika. Stir to mix.

  2. Prepare sauce in stove. Add tomato sauce and water.

  3. Stir in sauce to the rice mix. Add garlic and salt.

  4. Cut peppers in half and remove seeds and membranes.

  5. Add rice stuffing into the cut peppers.

  6. Bake stuffed peppers in oven at 475 degrees for 15-20 minutes.

  7. Add salmon to the stuffed peppers, drizzle with honey, and bake for 5 more minutes.

  8. Plate and enjoy!
