16 large pears (firm but ripe)
1 cup Goat cheese spread
Fresh parsley (roughly chopped for garnish)
Fresh thyme (leaves picked for garnish)
Ground pepper (to taste)
Arugula (24 leaves)

Instructions
Prepare your ingredients: Start by washing the parsley, thyme, and arugula leaves. Pat dry and set aside.
Slice your pears: Choose firm pears and slice them ¼ inch thick to act as a base for your sliders so they are sturdy enough to hold the product.
Spread Goat Cheese: Take one slice of pear and spread a layer of goat cheese on it. This not only adds flavor but will help hold the toppings in place. If the cheese is too hard to spread, you can soften it by stirring vigorously or letting it sit at room temperature for a while before using.
Add Arugula: Place a single arugula leaf on top of the goat cheese spread. The peppery taste will complement both the sweetness of the pear and the richness of the salmon.
Place Latitude 45 Candy Salmon: Add a piece of Latitude 45 Candy Salmon on top of the arugula. If your salmon pieces are larger than your pear slices, fold or cut them to size so they fit nicely on the slider.
Garnish: Sprinkle with a bit of chopped parsley, thyme leaves, and a light dusting of ground pepper. These herbs will give your sliders a fresh and aromatic touch.
Top it off: Place the second pear slice on top, gently pressing the two slices together to create a ‘sandwich’. For another variation on the recipe, you can serve it as an open-face slider using just one pear slice (like the example photo), but the sandwich variation is the preferred option for serving.

Additional Notes
Choose pears that are not too ripe, as they need to hold their shape and bear the weight of the toppings.
There is no need to peel the pears; the skin will add texture and color to your sliders.
