Smoked Salmon Garden Rice Bowl

Ingredients

  • 10-12 Latitude 45 Cold Smoked Salmon Loin slices

  • 2 cups rice

  • 1 avocado

  • ½ cucumber, sliced into rounds

  • 2 handfuls steamed edamame

  • 2 small bunches broccolini

  • 2 small bunches asparagus

  • ½ cup red onions, pickled

  • 2 radishes, slices​

  • 1 cup purple cabbage, shredded

  • Black sesame seeds

  • Soy sauce, for serving

Instructions

  1. Cook the rice following the packaging’s instructions.

  2. While the rice cooks, steam the edamame, broccolini and asparagus separately for 3-5 minutes each.

  3. Cut the avocado in half, remove the pit, peel and slice.

  4. Once the rice is ready lay out 2 bowls to start assembling the dish.
