Ingredients

Candied Salmon

  • 6 4oz Latitude 45 Traditional Smoke Roasted Salmon

  • 1 cup brown sugar

  • 1 cup maple syrup

  • ¼ cup water

Spooky St. Germaine Cocktail

  • 5.5oz brut champagne or sparkling wine

  • .5oz St. Germain

  • 4 round, even slices of blood orange

Instructions

  1. Candied Salmon

    1. In a large bowl, combine brown sugar, maple syrup, and water over medium-high heat.

    2. Stir until the sugar dissolves, then brush down the sides of the  pan with a wet pastry brush.

    3. Once boiling, insert a candy thermometer. Allow mixture to boil, without stirring, until candy reaches 300 º F (149º C).

    4. Remove saucepan from heat. Allow it to sit until it stops bubbling completely. Stir in the extract of your choice.

    5. Grab Latitude 45 Traditional Smoke Roasted Salmon using tongs  and quickly dip each piece into the mixture.

    6. Place each piece on parchment paper to dry. Allow to cool completely and enjoy. Happy snacking!

    Spooky St. Germaine Cocktail 

    1. Fill large wine glass 1/2 full with cubed ice

    2. Pour bubbly slowly halfway full (not to overflow)

    3. Add sweetener and stir

    4. Place slices decoratively around inside of glass

    5. Garnish with blood orange ribbon at the top
