Ingredients

  • 8 oz Latitude 45 cold-smoked salmon, diced

  • 1 cup cucumber, diced

  • 3-4 green onions, diced

  • 3 tbsp sriracha

  • 1 cup mayonnaise

  • 2 tbsp soy sauce

  • 2 tbsp lime juice

  • 1 tsp sesame oil

  • 1/2 tsp red chili flakes

  • Wonton chips, homemade or store-bought

  • Sesame seeds and extra lime slices for garnish

Instructions

  1. Start by prepping your ingredients and materials. Dice the salmon and the cucumber into small pieces. Finely chop the green onion and separate the white and green sections.

  2. To make the marinated smoked salmon and cucumber topping, mix together the soy sauce, lime juice, sesame oil, and the chili flakes. Add in the diced smoked salmon, the cucumber, and the white parts of the green onion. Stir to combine and set aside.

  3. To make the spicy mayo, mix together the sriracha and the mayonnaise. Add 1 tbsp of water to thin it out if desired.

  4. Now you can assemble your nachos! Start by laying down a layer of the wonton chips in a large serving dish. Add the marinated smoked salmon and cucumber mixture on top. Keep layering the ingredients in that order, and then top with the spicy mayo. Garnish with sesame seeds, the remaining green onion, and extra lime slices to serve!
