Smoked Salmon Walnut Salad

Ingredients

  • 1 pack Latitude 45 Cold Smoked Salmon 6 oz

  • 1 bag arugula

  • 1 cucumber

  • 1 cup pomegranate seeds

  • 1 cup walnuts

  • Sea Salt, to taste

  • Pepper, to taste

  • Extra Virgin Olive Oil, to taste

Instructions

  1. Toast the walnuts in the microwave for a couple minutes, checking periodically.

  2. Place the arugula on a plate.

  3. Slice the cucumber in rounds and place on top.

  4. Roll up 3-6 smoked salmon slices and place on the plate.

  5. Sprinkle the pomegranate seeds, toasted walnuts, sea salt and pepper. Drizzle with olive oil and enjoy!
