Smoked Salmon Sushi Pizza

Ingredients
1 pack Latitude 45 Cold Smoked Salmon 6oz
1 cup sushi rice
1 1/4 cup water
1/8 cup seasoned rice vinegar
½ cup hayashi wakame
¼ cup daikon
½ cup pickled ginger
2 tbsp black sesame seeds
½ cup soy sauce, optional topping
Instructions
- Combine the rice and water in a saucepan; bring to boil. Cover and reduce heat to low; cook for 25 minutes or until rice is tender. With fork, stir in rice vinegar.
- Line 8-inch round cake pan with plastic wrap. With spatula, press rice firmly and evenly into pan. Let cool completely. Turn out onto flat serving plate.
- Cut the Latitude 45 Cold Smoked Salmon slices into smaller pieces. Arrange the pieces evenly on top of the rice. Continue topping pizza with the hayashi wakame, daikon, and pickled ginger, leaving about a 1-inch perimeter around the pizza for the “crust”. Sprinkle the sesame seeds over the entire pizza.
- Cut the pizza into 6-8 slices, serve with a cup of soy sauce and enjoy!
