Mediterranean Zucchini Noodles with Smoke Roasted Salmon

INGREDIENTS

  • 4 oz Latitude 45 Smoke Roasted Atlantic Salmon
  • 2 zucchini, spiralized
  • 1 cup red cherry tomatoes, sliced in half
  • 1 avocado, diced
  • 3 garlic cloves, minced
  • ½ cup feta cheese
  • ¼ cup lemon juice
  • 2 oz olive oil
  • Salt and pepper to taste
  • Basil leaves (for garnish)

Instruction

  1. In a large pan, saute zucchini in garlic and olive oil.
  2. Break apart pieces of salmon and mix into the zucchini while sauteing.
  3. Place sauteed zucchini and salmon into a bowl. Toss in avocado, cherry tomatoes, feta cheese and lemon juice. Add salt and pepper to taste.
  4. Garnish with basil. Enjoy!
