Mediterranean Zucchini Noodles with Smoke Roasted Salmon

- 4 oz Latitude 45 Smoke Roasted Atlantic Salmon
- 2 zucchini, spiralized
- 1 cup red cherry tomatoes, sliced in half
- 1 avocado, diced
- 3 garlic cloves, minced
- ½ cup feta cheese
- ¼ cup lemon juice
- 2 oz olive oil
- Salt and pepper to taste
- Basil leaves (for garnish)
- In a large pan, saute zucchini in garlic and olive oil.
- Break apart pieces of salmon and mix into the zucchini while sauteing.
- Place sauteed zucchini and salmon into a bowl. Toss in avocado, cherry tomatoes, feta cheese and lemon juice. Add salt and pepper to taste.
- Garnish with basil. Enjoy!
